cis-3-Hexenal in Triacetin is a solution form of cis-3-Hexenal stabilized in Triacetin. cis-3-Hexenal is an unsaturated aldehyde that has a green, leafy odour and flavour. It is a volatile component of olive oil, and tomatoes. It is also a precursor of cis-2-Hexenol.
